Cooking spray
1 1/2 cups King Arthur Unbleached All-Purpose Flour (fluffed with whisk before measuring)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon grated nutmeg
1/3 cup (5 1/3 tablespoons) Cabot Salted Butter
1 cup mashed very ripe bananas (about 3 bananas)
1 cup sugar
1/2 cup Cabot 2% Plain Greek-Style Yogurt
2 large eggs
2 teaspoons pure vanilla extract
1. Preheat oven to 350°F. Coat 8 1/2- by 4 1/2-inch loaf pan with cooking spray, then dust with flour.
2. In medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg.
3. In large microwave-proof bowl, melt butter. Add bananas, sugar, yogurt, eggs and vanilla; beat with electric mixer on high speed for 1 minute. Add dry ingredients and beat on low speed just until combined. Scrape batter into prepared pan, smoothing top.
4. Bake for 50 to 60 minutes or until skewer inserted in center comes out clean. Let cool for 10 minutes, then remove from pan and let cool completely.
