1 tablespoon olive oil
2 teaspoons cider vinegar
Dash of salt
2 cups baby arugula or spinach
1/2 Braeburn apple, cored and thinly sliced
1 ounce Cabot Habanero Cheddar, grated (about 1/8 cup)
3 tablespoons pre-cooked bacon crumbles
1. In medium bowl, whisk together oil, vinegar and salt.
2. Add arugula, apples and cheddar to bowl and toss to combine. Serve sprinkled with bacon.
