Refreshing Change!
This recipe takes seconds to make in a blender. I just cut Seriously Sharp (it's the best!) and toss the cheese chunks into the blender with the cream cheese and beer, no need to "shred" the cheese. Spread is good on sandwhiches, excellant with chips, celery, with crackers. Everytime I make this spread it's a big hit, and people lick the bowl clean it's so tasty and unique. on 11/16/2009

8 ounces Cabot Sharp Cheddar or Extra Sharp Cheddar*, grated (about 2 cups)
4 ounces Cabot Vermont Premium Cream Cheese
1/3 cup dark beer
1 tablespoon Dijon mustard
Large pinch cayenne pepper
Classic or Supreme flavored Pretzel Crisps, bread or crackers
*Or flavored Cheddar, such as Cabot Horseradish Cheddar
1. Combine first five ingredients in food processor or blender; process until smooth and creamy.
2. Serve with Classic or Supreme flavored Pretzel Crisps, bread or crackers.
