3 tablespoons Cabot 2% Plain Greek-Style Yogurt or Plain Greek-Style Yogurt
1/2 teaspoon pure vanilla extract
1/4 teaspoon xanthan gum* (optional)
2- 2 1/4 cups confectioner’s sugar
1. Place yogurt and vanilla in medium bowl. Stir in xanthan gum, if using.
2. Gradually beat in confectioner’s sugar with electric mixer on high speed, adding enough to make stiff but spreadable frosting. Spread on cake immediately and let set.

*Xanthan gum is now easily found at health food or grocery stores (usually in the “natural” food section), because it’s used in many gluten-free recipes. It magically adds body to the frosting.
