CABOT, Vt. (March 6, 2009) – March is National Nutrition Month. In support of the American Dietetic Association’s campaign designed to focus attention on the importance of making informed food choices and developing sound eating and physical activity habits, Cabot Creamery Cooperative has developed a host of healthy recipes and activities for year-round enjoyment – all of which are available at www.cabotcheese.coop
National Nutrition Month was created by the American Dietetic Association more than 30 years ago to focus attention on the importance of making informed food choices and developing sound eating and physical activity habits.
“Whether you are young or old, in great shape or overweight, you can always make adjustments and improvements in your diet and exercise regimen,” says Sara Wing, Registered Dietitian and Health Programs Manager for Cabot. “Most people would be surprised to learn that small changes in diet and exercise can make a BIG change in how they look and feel. National Nutrition Month is a great starting point for everyone to focus attention on eating smarter and getting plenty of good exercise,” Wing adds.
Wing should know. As a Registered Dietitian, she has dedicated herself to educating consumers on the health benefits of dairy. Chief among the programs she promotes are The Big Bones Bash (www.bigbonesbash.com), a peer-to-peer competition held November 2009 at the Smithsonian Institution’s National Museum of Natural History that addresses calcium deficiencies among our nations’ teenagers. Also available free is the Cows, Calcium and Cheese kit that shows school students how to prepare healthier versions of their favorite fast foods. And Wing is no slouch in the kitchen. She routinely assists Cabot’s chefs in creating healthy, tasty reduced fat recipes.
“Cabot’s website (www.cabotcheese.coop) offers a wide range of healthy recipes and activities for kids, adults and educators which can be easily accessed on our website,“ Wing said. “By clicking on the ‘Your Health’ tab on the site, visitors can access dozens of health-related topics and hundreds of delicious, healthy recipes including gluten-free recipes the whole family can enjoy.
"They can learn why it’s important to get three servings of dairy a day, how to work on wellness, or ask a nutritionist specific food-related questions. Visitors can even send Cabot their favorite recipes and Cabot will do a recipe makeover turning the original into a healthier meal by cutting the fat and losing the extra calories,” Wing says.
Online guests can visit the Vermont cheese maker’s Cooking With Kids page to learn all about meals children love. Health professionals can visit Cabot’s Health Professionals Resource Center to learn more about the scientific support surrounding the company’s award-winning portfolio of dairy products.
“National Nutrition Month is a great place to start focusing on your health,” Wing says. “And Cabot Creamery Cooperative’s website is the perfect year-round place to learn about nutritious food and healthy activities. Together, that’s something we can all feel good about,” Wing says.

Cabot Apple Fractions
Cut red and green apples into wedges, removing the cores, and toss them with a little lemon juice to prevent browning; fan them on a plate with alternating slices of Cabot Cheddar Cheese.
For another version, core the apples, cut them crosswise into rings, spread with peanut butter and sprinkle with grated cheddar. Hard cheeses like cheddar are rich in protein and calcium, and kids need about 1300 milligrams of calcium every day to help build strong bones and teeth. Raw apples have lots of dietary fiber, important for fighting cholesterol, and crunching them helps to clean those teeth as well! Peanut butter, high in fiber and antioxidant vitamin E, has more protein than any other nut or legume.
