Survey After Survey of What Moms Want Most For Mother's Day Indicate Breakfast In Bed As One Of Mom's Top Wishes For Mother's Day
CABOT, Vt. (May 4, 2009) – Forget fancy diamonds, new clothes and other high-end gifts for Mother’s Day, scores of surveys indicate that the one thing most moms want is to take the day off and relax with their families. And there’s no better way to start Mom’s special day off right than serving her breakfast in bed. And Cabot Creamery Cooperative makes doing so easier than ever with a host of easy-to-make breakfast recipes sure to please Moms everywhere– all of which are available at http://www.cabotcheese.coop.
“There are more than 83 million mothers* in the United States,” says Cabot Creamery Public Relations Manager Bob Schiers. “Overwhelmingly, surveys indicate that moms across America don’t want expensive or lavish gifts from their family members but instead want a day off to relax and enjoy themselves and their families. And the farm-family owners of Cabot Creamery Cooperative know how important it is for moms to spend quality time with their families so they’ve created dozens of delicious breakfast recipes that dad and the kids can make to honor mom and celebrate this special holiday.”
There was a time when Mother’s Day didn’t exist as a national holiday but all that changed when Anna Jarvis organized observances in Philadelphia and Grafton, WV to honor her mother and other mothers she knew. As the idea gained popularity, Jarvis petitioned Congress to set aside a day to honor mothers. She finally succeeded in 1914 as Congress designated the second Sunday in May as Mother’s Day.

Caramelized Onion and Spinach Fritatta
Makes 2 servings
1 teaspoon butter
1 large sweet onion (such as Vidalia or Walla Walla), thinly sliced and separated into rings
1/2 teaspoon chopped fresh or 1/8 teaspoon dried thyme leaves
3 large eggs
3 large egg whites
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/4 teaspoon hot sauce (such as Tabasco)
1/4 cup frozen chopped spinach, thawed and squeezed dry
3/4 cup shredded Cabot 50% Reduced Fat Cheddar cheese, divided (3 ounces)
Cooking spray
1. Melt butter in a large nonstick skillet over medium heat. Add onion; cover and cook 3 minutes. Uncover, season with thyme and sauté an additional 10 minutes or until golden brown. Remove from pan and let cool.
2. Preheat broiler.
3. Whisk together eggs, egg whites, salt, pepper and hot sauce in a large bowl. Stir in caramelized onions, spinach and half of cheese.
4. Coat a small nonstick skillet or omelet pan with cooking spray; place over medium-high heat. Pour in egg mixture. Reduce heat to medium-low; cook 3 minutes or until bottom is lightly browned, lifting edges and tilting skillet as eggs cook to allow uncooked portion to flow underneath cooked portion.
5. Wrap handle of pan with foil. Broil frittata 2 minutes or until top is almost set. Sprinkle with remaining cheese and broil 2 additional minutes or until cheese is melted.
**Tip: This simple frittata makes easy use of eggs you probably already have on hand. For those who prefer a no-yolk version, simply use 1 1/4 cups egg substitute in place of the eggs and egg whites.

Broccoli-Potato Egg Pie with Cheddar and Bacon - Make Over
Makes 6-8 servings
1 tablespoon Cabot Unsalted Butter
1/4 cup chopped onion
1 1/2 cups frozen hash brown potatoes, thawed and patted dry
1/4 teaspoon salt
1 (11-ounce) can refrigerated soft breadstick dough
Cooking spray
2 cups frozen small broccoli florets, stems removed, thawed and patted dry
4 ounces Cabot 50% Reduced Fat Sharp Cheddar, grated
3 slices cooked bacon, chopped
4 large egg whites
3 large eggs
1/2 cup low-fat (1%) milk
1/2 cup reduced-fat sour cream
1 teaspoon mild paprika
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1. Preheat oven to 350:F. In large nonstick skillet over medium-high heat, melt butter. Add onion and cook, stirring, for 5 minutes or until tender. Stir in potatoes and cook until lightly browned, about 5 minutes longer. Stir in 1/4 teaspoon salt, remove from heat and set aside.
2. Place large piece of plastic wrap on work surface. Unroll breadstick dough, separating into strips. Place one strip on plastic wrap and coil into spiral.
3. Add second strip, pinching ends together, and continue coil. Repeat with remaining strips to form one large spiral. Cover with additional piece of plastic wrap and let rest for 10 minutes.
4. Without removing wrap, roll dough spiral out into 12-inch circle. Lightly coat 10-inch deep-dish pie plate with cooking spray. Remove wrap and press dough over bottom and up sides of pie plate.
5. Distribute reserved potato mixture, broccoli, cheese and bacon evenly over dough.
6. In medium bowl, whisk together whole eggs and egg whites until well combined; whisk in milk, sour cream, paprika, salt and pepper.
7. Pour egg mixture evenly over potato mixture. Bake for 30 to 40 minutes, or until golden on top and set all the way to center.

Apple-Cheddar Bread Pudding
Makes 6 servings
Nonstick cooking spray
5 slices whole-wheat bread
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1 cup grated Cabot 50% Reduced Fat Cheddar (about 4 ounces)
2 apples, cored, peeled and diced
2 large eggs
2 large egg whites
1/3 cup granulated white sugar
1 teaspoon vanilla
1 (12-ounce) can non-fat evaporated milk
1. Preheat oven to 325°F. Coat 9-by-9-inch or other 2-quart baking dish with nonstick cooking spray. (Alternatively, use six individual ramekins.)
2. Trim crusts from bread and cut each slice into 9 squares. Arrange bread over bottom of dish. Coat top of bread with nonstick cooking spray, then sprinkle with brown sugar and cinnamon. Scatter cheese over bread and top with apples.
3. In small bowl, whisk together eggs, egg whites, granulated white sugar and vanilla until well blended. Whisk in evaporated milk. Pour mixture evenly over other ingredients in dish.
4. Bake for 50 to 55 minutes, or until knife inserted in center comes out clean.
