Hot Broccoli-Cabot Cheddar Dip
Makes about 2 1⁄ 3 cups (serving size: 37 grams or 1/18 of recipe) 1 (10 ounces) package frozen chopped broccoli
8 ounces Cabot Sharp or Extra Sharp Cheddar, grated (about 2 cups)
4 ounces cream cheese
2 tablespoons milk
1/2 - 1 teaspoon Tabasco or other hot sauce
1/2 teaspoon freshly grated black pepper
1. Place frozen broccoli in microwave-safe bowl; cover loosely with plastic wrap and microwave until hot and tender, about 9 minutes (do not add any water).
2. Uncover and add cheddar, cream cheese, hot sauce and pepper to bowl. Cover again and microwave just until cheeses are melted, 1 to 2 minutes longer. Stir until smooth. (If mixture seems thin, it will thicken upon cooling slightly).
3. Serve with crackers and fresh vegetables.

Makes 2 cups for about 8 servings 1 (15-ounce) can black beans, rinsed, drained and partially mashed
1/2 cup drained canned whole kernel corn
1/3 cup salsa
1/4 cup water
2 teaspoons chili powder
Cooking spray
5 ounces 75% or 50% Reduced Fat Cabot Cheddar Cheese, grated (about 1 1/4 cups)
2 tablespoons drained canned green chilies
1. Preheat oven to 375 degrees.
2. Combine beans and next 4 ingredients; pour into a small casserole dish coated with cooking spray.
3. Sprinkle with cheese and green chiles.
4. Cover and bake at 375 degrees for 30 minutes or until cheese is melted and filling is bubbly. Uncover and cook an additional 5 minutes. Serve with tortilla chips.

Cabot Reduced Fat Chile Con Cheddar Queso

1-1/4 cups chopped onion (1 large)
1 (14 1/2-ounce) can diced tomatoes, drained
12 ounces Cabot 50% Reduced Fat Cheddar or 50% Reduced Fat Jalapeno Cheddar, grated (about 3 cups)
1 (7-ounce) can diced green chili peppers, drained
Tabasco Sauce (optional)
1. In medium saucepan, melt butter. Add onion and stir until tender. Add tomatoes and simmer until thickened, about 10 minutes.
2. Reduce heat to low. Add cheese and chili peppers and stir just until melted. Season with Tabasco to taste. Serve warm with baked tortilla chips.
