We ran a Facebook contest to find the best recipe featuring Cabot Cheddar for National Cheese Day. We had so many great entries - we couldn't choose just one! Our winners are: Most Mouthwatering: Tuscan Cheddar and Spinach Burger by Lisa C. AND Most Creative: The Simplest and Fastest Grilled Cheese Ever by Arthur F.
1 pound fresh spinach
2 pounds lean ground beef
1/2 cup dry breadcrumbs
2 ounces Cabot Tuscan Cheddar, grated (about 1/2 cup) plus slices for top
1/8 teaspoon kosher salt
1/8 teaspoon ground black pepper
1 clove garlic, minced
1 tablespoon balsamic vinegar
1. Put spinach in large bowl and cover with plate or plastic wrap; microwave for several minutes or just until wilted. (Or steam in saucepan.) Let cool, then chop.
2. Combine spinach with remaining ingredients. Shape into 8 burgers.
3. Grill to desired degree of doneness, then top with sliced cheese and cover until melted. Serve on buns if desired. Enjoy!
