En "Lightened" Burger Building

Backyard barbecues are heating up and burger-lovers are ready to fire up and get flipping. The problem, though, with a season full of burgers is that along with it comes a hefty serving of calories and saturated fat.

Many of you Cabot lovers have asked us for meals that no longer make red meat primary to the plate, yet many of you (like us) enjoy a good day of grilling. Our approach: build a better burger from the inside, out.

We've taken burger making to an en “lightened” level by reducing the amount of red meat used in the burger and instead, used turkey sausage to fill up the patty. When compared to ground beef, turkey sausage has fewer calories, the same amount of protein, but nearly half the fat making it a healthier substitute for a full ground beef patty. The results of our makeover: a deliciously different dinner al fresco!


"Lightened" Cabot Cheddar-Bacon Burgers with Chipotle Aioli


  • Used a mixture of beef and turkey to create a leaner, lower meat patty
  • Added chili powder and ground chipotle for enhanced flavor
  • Switched to Cabot 50% Reduced Fat Cheddar
  • Switched to turkey bacon
  • Added veggies as burger toppings
  • Used low fat mayo and Greek yogurt in aioli
  • Switched to whole wheat buns for added fiber  
"Lightened" Cabot Cheddar-Bacon Burgers with Chipotle Aioli

Makes 4 servings

 

1/2 pound hot Italian turkey sausage, casings removed
1/2 pound ground sirloin
4 ounces Cabot 50% Reduced Fat Cheddar, grated (about 1 cup)
1/2 teaspoon chili powder
1/4 teaspoon ground chipotle pepper
1/4 teaspoon salt
4 whole wheat buns, split
4 strips turkey bacon, cooked
Spinach leaves
Sliced tomatoes
Chipotle Aioli

  1. Preheat grill.
  2. Combine sausage and next 5 ingredients (through salt) in large bowl. Divide mixture into 4 equal portions, shaping into patties.
  3. Place patties on grill and cook for 10 minutes per side or until done.
  4. Toast buns on grill toward end of grilling time. Serve burgers topped with bacon, spinach, tomato and Chipotle Aioli.

Chipotle Aioli
Makes 2/3 cup

1/4 cup light mayonnaise
1/4 cup Cabot Greek Style Plain Yogurt
2 tablespoons Dijon mustard
1 tablespoon white or cider vinegar
1/2 teaspoon ground chipotle pepper or chipotle hot sauce

  1. In small bowl, whisk together all ingredients. Serve immediately, or cover and refrigerate for up to 2 weeks.
