We’ll start with the cafeteria classic – Chicken Nuggets. Our Baked Chicken Nuggets feature a yogurt and flour coating in lieu of the typical egg and breadcrumb combo, making for a much healthier version that the kids will gladly gobble up. Make nuggets ahead of time for the week, and store in the fridge or freezer. Pop them in the microwave in the morning and pack in an insulated container to keep warm till lunchtime. Sliced apples and cheddar cheese make a great pairing for this hearty lunch.
These Bean-Cheese Spirals are sure to please, and are super quick and easy to make. Simply spread seasoned black beans and shredded cheddar cheese on a rectangular wrap bread, roll tightly and store in the fridge wrapped in plastic wrap. When it’s time to pack lunch, slice off one-inch pieces and microwave just until the cheese is slightly melted to hold the spirals together. Serve with tomato salsa or Greek-style yogurt as a dip!
Yipes Stripes! This is a super simple lunch idea, especially fun for younger kids. Simply stack slices of bologna and cheddar cheese and cut into fun shapes using a cookie cutter. These are perfect for bento-style lunch boxes, and pair well with cherry tomatoes or grapes for a tasty – super quick – lunch.
Next up, try our delicious Cheeky Cabot Cheese Turkey Pockets. This recipe is so easy to customize and packs lots of yummy (and healthy) veggies and protein – plus it features every child’s favorite “dip” – RANCH! Simply toss veggies, fruit, nuts and chopped chicken or turkey in a Greek-style yogurt, sour cream, ranch dressing mixture and spoon into pita halves. The pockets can be wrapped and stored in the fridge for up to 24 hours.
For another quick lunch, try these Gobblers with Cabot Cottage Cheese. Fold rounds of deli-sliced turkey or roast beef in half, and stuff with cottage cheese and dried cranberries.
