Fall and winter are prime time for mushrooms. Mushrooms are not only tasty and versatile, but contain two important B vitamins― riboflavin (B2) and niacin (B3), which aid in metabolism and healthy skin and hair (bonus!). So try something new and exciting by adding some mushrooms to your fall recipe line-up.
Starting with these Vegetarian Stuffed Mushrooms – perfect for serving to guests – they are full of flavor and have only 3 grams of carbs per mushroom. Don’t be intimidated by this seemingly formal appetizer, they are really easy to prepare. All the ingredients are sautéed together, then stuffed into the mushrooms and baked – ready in no time.
Here are two deliciously satisfying main course recipes featuring mushrooms. These Grilled Cheesy Portabello Caps with Turkey and Sage are surprisingly filling. Not only are they low carb, but they are lactose free as well. Add a simple side salad or seasonal roasted veggies for a perfect family dinner.
Next, what could be easier than a one-pot meal – this Skillet Chicken will warm you right up with its delicious sour cream, cheddar and mushroom sauce. Again, low carb, super satisfying and packs a whopping 40g of protein per serving. Delish!
And last but not least, these Savory Cheddar Biscuits would be a perfect companion to the Skillet Chicken recipe or alongside your favorite soup or stew. Only 12 grams of carbs per biscuit and delicious served fresh out of the oven. Don’t have any self-rising flour on hand? Use 2 cups less 2 tablespoons of all-purpose flour; and add 1 tablespoon of baking powder, plus 1 teaspoon of salt. You can also make these with light cream or reduced-fat milk for an even lighter version.
