This quick and easy recipe uses corn in any form, be it left-over from yesterdays dinner, fresh off the cob, or frozen, it takes 5 minutes to stir together and fries up in a jiffy on your stove-top. Straight from the pan or as a base for toppings, these fritters can be snack, fancy appetizer, side dish or main, we’ve topped ours with a little Cabot Sour Cream and chives, but your imagination is the limit with these cheesy little fritters. In a large bowl, whisk together the dry ingredients. Grate the Cabot Garlic and Herb Cheddar Cheese and add to the flour-cornmeal mixture.
Whisk the milk, egg and maple syrup together and stir into the above.
Add the corn and give it another quick stir, no need to over-mix. Set the batter aside while the oil heats.
Heat the oil in a skillet on the stovetop, when hot, but not smoking, drop the batter in by tablespoonfuls into the pan. Cook until golden and give them a flip, same treatment on the other side until done. Drain on paper towels and serve! Easy as pie!!
