When you’re juggling family and work obligations, you need quick, easy weeknight dinners that are family-friendly. Between homework, soccer practice, dance recitals, and band practice it’s sometimes hard to think about what’s for dinner and way too easy to just swing by the fast food joint on your way home or call for delivery. We all know kids can be picky, so choosing a simple, mild protein such as chicken to build your meals around will surely leave kids bellies full and happy.

First up, Baked Chicken Nuggets. Making chicken nuggets at home is not only easy and delicious, but also way healthier than the drive-thru version. We’re sure your kids will be requesting these often! Using Cabot Greek Yogurt as a coating in place of breadcrumbs results in perfectly crisp and golden nuggets. Steam some broccoli in the microwave and top with shredded cheddar for a quick veggie side dish.

Crispy Cheesy Chicken Parmesan – another tried and true weeknight dinner! This version is made a bit healthier with the addition of Sharp Lite50 Cheddar in place of some of the Parmesan, and using less oil for frying and finishing in the oven. A quick side of whole-wheat pasta completes this easy dish.

Want a great way to get ahead on weeknight dinners? Toss a few large boneless, skinless chicken breasts in the crockpot on Monday morning and add just enough water or broth to cover. Let them cook during the day then cube or shred and store for use during the week. Here are two perfect recipes using pre-cooked chicken that will come together in no time.

These Barbecue Chicken Enchiladas are sure to be a family favorite. Previously cooked chicken is added to your choice of veggies in this dish – we recommend black beans and corn, but bell peppers or zucchini would be great as well. Enchiladas are baked and ready in about 30 minutes, or can be made ahead, covered and refrigerated until you’re ready to bake them. Swap the sour cream for Greek-Style Yogurt for a lighter topping.
