Mac and Cheese Mania

It’s officially fall and it’s time to fall in love with mac and cheese all over again. We’ve gone beyond the basics with some new, exciting variations of mac and cheese to warm you up on those crisp fall evenings. Casseroles are great for preparing ahead to pop in the oven on busy nights, perfect for large groups, and excellent for leftovers, though there might not be much leftover with these recipes.

Let’s start off with Grown Up Macaroni and Cheese with Butternut Squash. Nothing says fall like delicious butternut squash – add it to mac and cheese and you’ve got a slam-dunk! Even though it’s called grown up, the kids will love this one too. The butternut squash is boiled along with the milk, saving time and dishes – can’t beat that.

Here’s another grown up version – Bourbon Bacon White Cheddar Mac and Cheese…wait, did you say bacon AND bourbon? You betcha. This recipe may sound fancy, but it’s just as easy to put together as tradition mac and cheese. Adding some bourbon to the cheese sauce really kicks it up a notch – or substitute your favorite seasonal beer.

OK, so we know mac and cheese is the ultimate comfort food and sometimes you want to satisfy that craving but save a few calories. Here’s the perfect version of Light Mac and Cheese.
