Mother’s Day: Easy Like Sunday Morning

This Mother’s Day give Mom what she really wants: a relaxing morning with her family. Avoid the lines at the buffets and stay home instead. We’ve put together a menu for a delicious brunch that Dad and the kids can easily prepare together – perhaps while Mom is sleeping in?

If your mom is like ours, she wants everyone to eat more fruits and veggies. So this menu features healthy, seasonal favorites, like strawberries and asparagus, and just a hint of indulgence in the form of a warm, cheesy biscuit.

(And Mom, if you are reading this, show it to Dad so he and the kids can get to work!)

Tips for a successful brunch:

– The mini-quiches can be made ahead, frozen and reheated just before brunch. The strawberry smoothie comes together in a matter of minutes and the cheddar cream biscuits have just five ingredients. You got this!

– By preparing the dishes in advance, you have time to clean up the kitchen and set a pretty table that will warm Mom’s heart. Don’t forget the fresh flowers!

– If it’s a nice day, follow up your delicious and healthy brunch with a fun outdoor family activity.
