1 pound 85% lean ground beef
2 tablespoons prepared horseradish
2 teaspoons Dijon mustard
½ teaspoon salt
¼ teaspoon ground black pepper
4 (½-inch-thick) slices red onion, not separated into rings
2 teaspoons olive oil
4 ounces Cabot Sharp Cheddar, sliced or Sharp Cheddar Cracker Cuts
4 large slices sourdough bread, cut in half

To make 4 burgers, preheat your grill to high. Gently combine ground beef, horseradish, Dijon mustard, salt and pepper in a medium bowl. Shape mixture into four ¾-inch-thick burgers.
Next, brush red onion slices lightly with olive oil. Brush the grill with a wad of paper towel dipped in oil to prevent sticking. Place burgers and onion slices on grill and cook burgers to desired degree of doneness, about 4 minutes per side for medium rare. Cook the onions until browned, about 4 to 5 minutes per side. Toast the sourdough bread lightly.
Topburgers with Cabot Sharp Cheddar cheese or Sharp Cheddar Cracker Cuts and cover with grill lid or foil until cheese is melted, about 1 minute. Serve on lettuce-topped bread, garnished with grilled onions separated into rings.
