This is the best, reasonably priced Cheddar cheese we have ever been able to find anywhere. We live in Ontario, Canada, famous for our cheddar and there are several very, very good cheddars here as well. However we pick up this Cabot Seriously Sharp usually at Walmart or Topps in Western New York, just across the Canadian/US border about 20 miles from home for under ten bucks for a two pound brick. It is delicious and we have missed it a lot during the Covid 19 difficulties and hope to travel across again soon. We bought this cheese for several years when it was called Hunters Seriously Sharp and got it at the Cabot factory at the time, before the name change! Great memories at the factory having gone on the factory tour a few times back when they were still were able to do public tours, right inside the factory!
I have loved the Seriously Sharp cheddar for years. Recently, the only version I have found is in a new package with the phrase “aged 18 months” on it. The flavor has less bite and the consistency is different. It doesn’t slice as cleanly as the previous version. Is this the “new” Seriously Sharp”? Or a new version of it? I enjoyed the original version more and hope you will revert to it. The original version received a solid 5 stars.

Thank you for your review and question. Sounds like you are referring to our Seriously Sharp Deli Bar. Our Deli Bar should be older/sharper and likely less smooth (since cheddar loses moisture as it ages) and more difficult to slice. Letting it rest at room temperature for 15 – 30 minutes will make slicing easier. Or try our Seriously Sharp Dairy Bar for a smoother slice. Regarding sharpness, our Vermont Sharp and Extra Sharp cheddars are very predictable and consistent batch to batch. Seriously Sharp is another story; it’s our “wild” cheddar. Its flavor is unpredictable, always earns a “puck,” and is usually even sharper than Extra Sharp, but sharpness can vary batch to batch. There has not been any change to our recipe.
When I discovered I was lactose intolerant I thought it meant no more milk or cheese. The day I took the time to read the ingredients of Cabot cheese was a banner day! I was one happy lady. I have purchased nothing but Cabot cheddar since. Thank you!
I have been buying Cabot Seriously Sharp for years and fully enjoy every bite. It is great on a sandwich but even better sliced and melted on slices of baguette, particularly when served with fresh apples. Better than much of the cheddar I had while living in England. Keep it coming! Where can I buy garlic flavored Cabot cheese? I know you make it but can’t find it locally.
