Thank you for your comment and question. Cabot has tried numerous recipes to make our Horseradish Cheddar with real horseradish root. Unfortunately, after the aging process for our cheddar is completed, the quality of the horseradish root has not met our quality standards. The horseradish flavor that we currently use is made from an all-natural, proprietary combination of oils, mustard and spices that match the horseradish flavor as closely as possible.
