Butter-flavored cooking spray
2 cups thinly sliced peeled apples
⅓ cup sugar
½ teaspoon ground cinnamon
½ teaspoon rum flavoring
⅓ cup raisins
8 (6-inch) flour tortillas
6 ounces Cabot Lite50 Sharp Cheddar, grated (about 1½ cups)
Get the ingredients you need at a convenient nearby location.
COAT a large skillet with cooking spray. Place over medium heat, add apples and cook, stirring, until tender. Remove from heat.
MIX sugar with cinnamon in large bowl; set 1 tablespoon of mixture aside for topping. Stir apples into remainder, along with rum flavoring and raisins.
USING all of cheese, top each tortilla to within ½ inch of edge. Spread apple mixture over cheese.
WIPE skillet clean and re-coat with cooking spray; place over medium heat until hot. Place as many tortillas as will fit, filling-side-up, in skillet; let cook for about 1 minute or until warm. Remove from skillet and fold in half. Cover and keep warm while cooking remaining quesadillas. To serve, leave whole or cut into thirds. Sprinkle tops with reserved cinnamon sugar.
