4 large cooking apples, such as Empire, peeled, cored and thickly sliced
⅔ cup Ocean Spray Cranberry Juice Cocktail
½ cup sugar
1 teaspoon cinnamon

COMBINE apples, cranberry juice cocktail, sugar and cinnamon in large microwaveable bowl; toss to combine. Cover with plate or plastic wrap and microwave on high power for 12 minutes.
STIR apples and continue to cook for 2 minute intervals until apples are completely tender and translucent.
MASH apples into chunky apple butter, or puree in blender or food processor if smoother texture is preferred. (If butter is too thick, add a little more juice; if too thin, microwave slightly longer.)
COOL, cover and refrigerate.
Serve with Buttermilk Cheddar Biscuits.
