2 cups King Arthur Unbleached All-Purpose Flour
⅓ cup sugar
3 teaspoons baking powder
½ teaspoon salt
4 ounces Cabot Sharp Cheddar, grated (about 1 cup)
¾ cup Ocean Spray Cranberry Juice Cocktail
⅓ cup canola or other vegetable oil
1 large egg
1 cup peeled and finely diced apples
½ cup Ocean Spray Craisins Original Dried Cranberries
Get the ingredients you need at a convenient nearby location.
PREHEAT oven to 400°F. Coat insides of 12-hole muffin pan with cooking spray or line with muffin cups.
WHISK together flour, sugar, baking powder and salt in a mixing bowl. Stir in grated cheddar.
WHISK together cranberry juice, vegetable oil and egg, in another bowl. Add juice mixture to dry ingredients along with apples and cranberries; stir just until dry ingredients are incorporated, but batter is still lumpy.
FILL muffin cups about two-thirds full. Bake for 15 to 20 minutes or until nicely browned on top and skewer inserted in center comes out clean. Let stand for about 1 minute before removing from pan.
Made these for the first time, dough is pretty dense and I was concerned how they'd turn out.
Used milk instead of cranberry juice, didn't want
a weird taste from the juice. Tasted fine but I seem to be the only person in our home who can taste the cheddar in these and I used sharp cheese. Really? Muffins do not rise much above the fill line and bake up nicely. I was a happy camper! Nice change from a sweet muffin and they have the taste of fall or autumn to me. Try them and see what you think.
Muffins were very dense. Not much flavor.
Any ideas as to how to make it more flavorful?
Cranberries were a great addition.
I made these this morning and brought them to work to share. They are a big hit. Not nearly as sweet as many muffins. Just enough with lots of flavor and good texture. I will be making these again and again.
