To make a dozen muffins, you will need: all-purpose flour, Cabot Lowfat Vanilla Bean Greek Yogurt, Cabot Sharp Cheddar (shredded), brown sugar, eggs, milk, chopped apples, whey protein powder, and cinnamon.
First, preheat your oven to 350°F and get out a 12-cup muffin tin. Mix your dry ingredients together in a medium bowl and your wet ingredients together in a separate medium bowl, as directed below. Then add the dry ingredients to the wet ingredients, mixing until well blended. Add the cheese and apples and fold in, mixing until they are just incorporated into the batter. Fill muffin cups with batter until batter almost reaches the top of each cup. Bake for 25 to 30 minutes, or until the tops of muffins are golden brown. Remove from oven and let cool until muffins are safe to handle.

2 cups King Arthur All-Purpose Flour or King Arthur Gluten-Free Flour
1 cup Cabot Lowfat Vanilla Bean Greek Yogurt
4 ounces Cabot Sharp Cheddar, shredded (about 1 cup)
1 cup brown sugar
2 eggs, beaten
½ cup low fat milk
2 cups apples, chopped ÂĽ inch dice
1 scoop whey protein powder
½ teaspoon cinnamon

PREHEAT the oven to 350°F.
WHISKÂ together flour, brown sugar, cinnamon and whey protein in a medium bowl.
BLEND the yogurt, eggs and milk in a separate medium bowl.  Add the dry ingredients to the wet ingredients and mix until well blended. Add the cheese and the apples and fold in. Mix until the cheese and apples are just incorporated into the batter. Using a spoon, fill each muffin cup until they are almost even with the top. You can also add extra apples to the top of each muffing if you like.Â
BAKE at 350°F for 25 to 30 minutes or until the tops of the muffins are golden brown. When done remove the muffin pan from the oven and let cool until you can handle.
