1 package frozen sweet potato waffle fries, baked according to directions on package
1 can black beans, drained and rinsed
1 8ounce bag Cabot Fiery Jack Shredded Cheese
⅓ cup chopped fresh cilantro
2 medium Roma tomatoes, chopped
BAKE a 20 ounce package of sweet potato waffle fries according to package.
TOP fries with black beans, and shredded cheese. Bake an additional 5-8 minutes or until the cheese is melted.
GARNISH with chopped tomatoes, cilantro, and a squeeze of lime.
