With this blueberry icebox pie recipe from our friends at Seventh Generation up your sleeve, you’ll be able to whip up a delicious, cool, and creamy dessert in no time! After preparing the graham cracker crust and making the filling, you’ll simply let the pie chill in the freezer for several hours. Only seven ingredients are required to make 8 servings of this yummy blueberry icebox pie. For the crust, you’ll need 12 graham crackers (crushed), 2 tablespoons of brown sugar, and 6 tablespoons of butter (melted). For the pie filling, you’ll need 2 cups of Cabot Lowfat Vanilla Bean Greek Yogurt, ⅓ cup honey, ½ cup blueberries (plus more for topping), and the juice and zest of 1 small lime.
Preheat your oven to 350 degrees. Prepare the graham cracker crust by blending the graham crackers and brown sugar together in a food processer. Mix the crumbs with the melted butter, press the mixture evenly into a 9-inch pie pan, and then bake the crust for about 10-15 minutes.
To make the pie filling, mix Cabot Lowfat Vanilla Bean Greek Yogurt, honey, ½ cup of blueberries (blended), and lime juice together until combined. Spoon into the cooled pie crust and top with reserved whole blueberries and lime zest. Let chill in the freezer for at least 3 hours, preferably overnight.
