½ cup egg substitute
2 ounces Cabot Lite50 Jalapeño Cheddar, grated (about ½ cup)
1 tablespoon chopped green pepper
1 tablespoon chopped onion
2 small (6-inch) fat free flour tortillas
Nonstick cooking spray
2 tablespoons Cabot Lite50 Sharp Cheddar, grated
Cabot Nonfat Plain Yogurt
COMBINE egg substitute, jalapeno cheddar, green pepper and onion in small bowl.
COAT lightly a nonstick skillet with cooking spray; add egg mixture and cook until set, turning once.
HEAT tortillas in microwave until warm, about 30 seconds. Sandwich egg mixture between tortillas and top with cheddar. Cut into wedges and serve with salsa and yogurt.
