Cheese crisps are surprisingly easy to make. All you need to get started is nonstick cooking spray, 16 ounces of Cabot Sharp Cheddar (coarsely grated) and three tablespoons of King Arthur Unbleached All-purpose Flour. In order to make the crisps, you’ll need to preheat your oven to 375° and coat three baking sheets with cooking spray. Then mix your cheese and flour in a bowl, and place tablespoon-full servings of the cheese mix on your sheets, placing them about once inch apart. Bake everything for roughly six to nine minutes, or until the crisps have turned a lovely shade of golden brown. Remember to let the crisps cool for a few minutes before serving.

PREHEAT oven to 375°F. Coat 2 large or 3 medium baking sheets with cooking spray.
TOSS together cheese and flour until well combined in a small bowl.
PLACE heaping tablespoonfuls of mixture 1 inch apart on prepared baking sheets, spreading out slightly (you can fit 12 mounds on large 12-by-15-inch sheet).
BAKE in middle of oven for 6 to 9 minutes, or until completely golden with no pale spots. Watch crisps carefully toward the end, removing fully-baked crisps with a metal spatula to wire rack and returning underbaked crisps to oven. Let cool completely. Store in airtight container for up to 3 days.
These babies should be Schedule 1 drugs. I am going to have to hide them away somewhere or I will inhale the whole batch. Made them with Extra Sharp cheddar since that’s what I had. They took 10-12 minutes, longer than recipe indicated, but that’s a function of individual ovens, no doubt.
