Now, while you generally cook omelets in a skillet, this recipe is a little different. The recipe actually calls for four large eggs, and you’ll add all of the ingredients into a pie plate or a shallow baking dish and then bake it in the oven. The result is a sort of cross between a casserole and an omelet, and trust us, it really hits the spot! The recipe makes two servings, and it features lots of our Cabot Sharp Cheddar. The great thing about omelets is that they’re easy to make, and you can serve them for breakfast, lunch and even dinner. Once you’re ready to get cooking, you’ll need four large eggs, two tablespoons of milk, salt, black pepper, roasted red peppers (you can purchase the pre-diced and jarred version), green onions, and four ounces of Cabot Sharp Cheddar. Now, if you prefer your cheddar to be really sharp, you can go for Cabot Extra Sharp Cheddar or Cabot Seriously Sharp Cheddar instead—it’s totally up to you! Just remember to preheat your oven to 400°F and to bake the mixture for 12 to 15 minutes. We also suggest sprinkling a little bit of extra cheddar on top of the omelet when you serve it.

4 large eggs
2 tablespoons milk
⅛ teaspoon salt
Pinch ground black pepper
¼ cup diced jarred roasted red peppers
2 tablespoons chopped green onions
4 ounces Cabot Sharp Cheddar, Cabot Extra Sharp Cheddar or Cabot Seriously Sharp Cheddar, grated & divided (about 1 cup)
PLACE rack in middle of oven and preheat oven to 400°F. Coat pie plate or small shallow baking dish with nonstick cooking spray or brush with oil.
WHISK eggs until combined and frothy, in small bowl. Add milk, salt and pepper and whisk again. Stir in peppers, green onions and ¾ cup of cheese.
POUR mixture into prepared pie plate, distributing evenly. Bake for 12 to 15 minutes, or until puffed and set all the way to center. Remove from oven and sprinkle with remaining ¼ cup cheese.
Easiest way to make an omelet to serve 3 generously. Easy to add other veggies too. Quick & simple dinner with a salad.
