2 tablespoons chopped onion
1 beaten egg yolk
½ teaspoon steak seasoning
½ pound ground turkey
8 slices whole grain bread
24 (½ inch) cubes Cabot Sharp Lite75 Cheddar (about 4 ounces)
Optional garnishes: dill pickle slices, catsup, mustard and green onions
PREHEAT broiler.
COMBINE onion, yolk and steak seasoning in a medium bowl. Crumble turkey over mixture and mix well. Shape by teaspoonfuls into 24 balls; set aside.
REMOVE crusts from bread. Roll flat and cut into 1 ½ inch rounds; set aside.
MAKE depression in each turkey ball and fill with cube of cheese. Place turkey balls, cheese-side-down, onto bread rounds. Press ball onto bread, making sure bread is covered with turkey ball. Seal edges.
PLACE on baking sheet. Broil about 6 inches from heat for 3 to 5 minutes or until turkey is no longer pink. Garnish as desired and serve.
