To make this poutine recipe, position rack in upper third of oven and preheat broiler. Melt Cabot Unsalted Butter over medium heat in a medium saucepan. Add flour and whisk for about 1-2 minutes, until the mixture smells slightly nutty.
Pour the chicken broth and beef broth slowly into the flour mixture, whisking constantly, until smooth. Continue to whisk for 3-5 minutes, until thickened. Then add the rice vinegar, Worcestershire sauce, salt and pepper, whisking to combine.

1 teaspoon rice vinegar
1 teaspoon Worcestershire Sauce
1 teaspoon Kosher salt

8 ounces Cabot Pepper Jack, cut into small cubes
