What’s red and green and white all over? These absolutely beautiful and delicious Greek yogurt popsicles! Made with fresh kiwi, pomegranate seeds, and Cabot Greek Yogurt, these treats look like Christmas, but taste like summer! This recipe from our friends over at Seventh Generation makes six popsicles. Four simple ingredients is all you need to make these Greek yogurt popsicles with fruit: 1 pound Cabot Greek Yogurt, 2 fresh kiwis (peeled and sliced), ½ cup pomegranate seeds, and ¼ cup raw honey (to make them vegan, use agave syrup in place of honey).
Mix all the ingredients together, setting aside a few kiwi slices to add to the popsicle molds separately. Scoop the mixture into popsicle molds, filling almost to the top. Take the reserved kiwi slices and slide them down the sides of the molds so they will be visible.
When the popsicles are removed from the molds. Freeze for at least five hours. Feel free to experiment with different fruits of your choice - with Cabot Greek Yogurt as the base for this recipe, there are so many possible combinations!
