When you want a super healthy and delicious smoothie, we can’t recommend this carrot cake smoothie highly enough! All you need is a blender and 7 basic ingredients and you’ll be all ready to enjoy in just a few minutes! To make 2 servings, you’ll need 3 carrots* (peeled and cut into 1-inch pieces), 1 to 1½ cups of ice, 1 (8-ounce) can of crushed pineapple in juice, ½ teaspoon of grated ginger, a pinch of cinnamon, 1 cup of Cabot Plain Greek Yogurt, and a splash of vanilla extract.
*Note: If using a high-powered blender, carrots will not need to be cooked. If using a regular blender, we recommend covering carrots in water in a microwave safe bowl and cooking on high for 5 minutes. Drain carrots before adding to blender.
Combine all ingredients in blender and process until smooth. Pour into two tall clear glasses and enjoy!
