For an after school or anytime snack that’s super quick to make, healthy and fun to eat, try this apple cheese sandwich recipe. Slices of Cabot Seriously Sharp Cheddar Cracker Cuts are layered between two apple rings to create a “sandwich”, which is then drizzled with honey and sprinkled with riced broccoli. With just these 4 simple ingredients, this nutritious snack comes together in no time and will be devoured just as quickly. You can’t go wrong! For 4 servings, cut 2 apples into 8 equal sized rings. Remove the core from each apple ring.


Place one apple ring on a plate and layer with 3 slices of Cabot Seriously Sharp Cheddar Cracker Cuts. Top with an additional apple ring to create a “sandwich.”


Drizzle honey onto the top of the sandwich and top with riced broccoli sprinkles. Repeat with the remaining apple rings.


*Note: If you can’t find riced broccoli at the store, you can take a broccoli floret and finely grate it in a food processor to create “rice” ahead of time.

  • ¼ cup riced broccoli*

Directions

  1. CUT apples into 8 equal sized rings. Remove core from each apple ring (you can use a small cookie cutter)
  2. PLACE one apple ring on plate and layer with 3 slices of cheese.  Top with additional apple ring to create a “sandwich.”
  3. DRIZZLE top of sandwich with honey and top with riced broccoli sprinkles. Repeat with the remaining apple rings.
