1 pound fully-cooked sausage of choice (I used apple chicken)
½ tablespoon oil
1 sweet potato, peeled and diced
¼ cup water
½ onion, diced
1 green bell pepper, diced
1 tablespoon rosemary, chopped
Salt and pepper to taste
1 ounce Cabot Vintage Choice Cheddar, grated (about ¼ cup)
ADD oil to sauté pan over medium low heat. Cook sausage until warmed through and brown.
PLACE sweet potatoes and water in a large sauté pan. Place lid on top (on side for steam to escape) for a few minutes until water is almost evaporated, turning potatoes occasionally. Take off the lid and add onions, pepper, rosemary salt and pepper. Cook stirring occasionally for 5-7 minutes.
ADD sausage and cheese on top. Mix until well combined. Serve warm.
