8 ounces Cabot Extra Sharp Cheddar or Cabot Garlic & Herb Cheddar grated (about 2 cups)
¼ cup Cabot Sour Cream2 tablespoons Cabot Salted Butter, cut into small pieces
2 tablespoons white wine or apple juice
Large pinch ground mace or nutmeg
Pinch ground red pepper (cayenne)
COMBINE all ingredients in food processor and process until smooth. (Alternatively, use electric mixer to blend ingredients; spread will have coarser texture.) Serve with whole-grain crackers, rounds of French bread or slices of fresh apple and pear.

This dip is delicious! I make it with Sauvignon blanc and its great! its best served right away does not refrigerate well. Serve at room temperature for best taste.
