3 tablespoons Cabot Salted Butter
3 tablespoons King Arthur All-Purpose Four
1½ cups milk
¾ teaspoon salt
⅛ teaspoon ground black pepper
1 teaspoon Worcestershire sauce
1 pound onions, sliced
4 ounces Cabot Smoky Bacon Cheddar, shredded (about 1 cup)
PREHEAT oven to 350ºF. Butter 2-quart baking dish or coat with nonstick cooking spray.
MELT butter, in saucepan.
WHISK in flour and cook, whisking constantly, until thick, smooth and golden. Continue whisking while gradually adding milk. Cook until thickened.
REMOVE from heat and stir in salt, pepper and Worcestershire; set aside.
Place onions in microwave-safe dish; cover with plastic wrap or plate and microwave until wilted.
LAYER wilted onions and grated cheese in prepared dish. Pour reserved sauce evenly on top. Bake until bubbly and golden, about 30 minutes.
