Arrange cheddar cheese cubes in rows to form a tree shape on a large platter or cutting board, using a different flavor of cheese for each row. Separate flavors with fresh thyme sprigs and rows of cherry tomatoes or olives. For the star on top, cut triangles of cheddar cheese and arrange them into a star pattern
