1 cup sugar
1 stick (8 tablespoons) Cabot Salted Butter, at room temperature
2 large eggs
1½ cups King Arthur Unbleached All-Purpose Flour
1 teaspoon baking powder
½ cup Cabot Lowfat Vanilla Bean Greek Yogurt
6 tablespoons Florida Orange Juice
½ teaspoon grated orange zest
PREHEAT oven to 325°F. Grease 9-by-5-inch loaf pan and set aside.
CREAM together sugar and butter with mixer or whisk in a large bowl. Add eggs and mix well; set aside.
MIX together flour and baking powder in a small bowl. In another small bowl, mix together yogurt, orange juice and zest until well blended.
ADD dry and wet ingredients alternately to butter mixture, mixing well between additions.
Spoon batter into prepared pan. Bake for 40 to 50 minutes or until skewer or knife inserted in center comes out clean.
REMOVE from oven and let cool slightly before removing loaf from pan. Cool loaf on wire rack if time allows.
