CUT the cucumber lengthwise into 18 thin slices with a vegetable peeler.
PLACE a cube of the Cabot Garlic Herb Cheddar Cheese and a piece of the smoked salmon on one end of each cucumber slice. Roll up tightly and skewer with a toothpick to hold together.
