1 cup rice flour (brown or white)
½ cup tapioca starch
¼ cup cornstarch or potato starch
2 teaspoons xanthan gum
¾ teaspoon salt
1 tablespoon sugar
½ teaspoon baking powder
8 tablespoons cold Cabot Salted Butter, cut into pieces
3-4 tablespoons cold water, divided
1 teaspoon cider vinegar
COMBINE first 7 ingredients in a bowl.
ADD butter and work into the mixture until it resembles coarse meal.
ADD half the water and all the vinegar, until dough forms a ball, adding remaining water if necessary.
REMOVE the dough ball and roll it out between two pieces of plastic wrap until about 1/4 inch thick. Freeze for 15 minutes.
REMOVE the top piece of plastic wrap. Cut the dough into circles using a biscuit cutter or rim of a drinking glass.
