The ingredients are combined using a food processor (or an electric mixer), which helps to keep the Golden Dollars tender by limiting the handling of the dough, and they’re baked until lightly golden and perfectly crisp. To make about 36 cheese potatoes, preheat your oven to 400°F. Coat a baking sheet with nonstick cooking spray.
In a food processor combine Cabot Sharp Cheddar cheese, Cabot Salted Butter, Tabasco and garlic powder. Add flour and process until the mixture forms a ball. (Alternatively, blend with an electric mixer.)
Divide the dough in half. Shape into two logs, each about 1ÂĽ inches in diameter. Roll logs in poppy seeds or toasted sesame seeds to coat. Wrap in plastic wrap and refrigerate for at least 30 minutes, or until firm.
Cut logs crosswise into ÂĽ inch-thick slices. Place on prepared baking sheet, pressing a ridged pattern into the top of each slice with the tines of a fork, if desired.
Bake for 10 to 12 minutes, or until golden. Transfer to a wire rack to cool.
