Named for Vermont – The Green Mountain State – this Green Mountain Smoothie is so good, you might forget that it's also so good for you. Loaded with vitamin-rich kale and protein packed Greek yogurt, it's the smoothie that's got it all!
1 cup Cabot Plain Lowfat Greek Yogurt or Cabot Plain Greek Yogurt
1 cup ice
¾ cup apple cider or apple juice
1 banana, peeled and broken in half
3 soft dates, pitted and cut in half
2 tablespoons honey
3 cups clean torn kale leaves
BLEND in blender, combine yogurt, ice, cider or juice, banana, dates and honey.
ADD kale leaves and puree on high speed for about 45 seconds or until completely smooth. Serve immediately.

I'm not a big veggie eater but I'll eat the recommended daily servings with this recipe. Never did I imagine that drinking my veggies could taste this good! (I used apples instead of juice and omitted the dates.)
