PREHEAT oven to 375°F. Line a baking sheet with a piece of foil large enough to wrap around the loaf.
CUT vertical 1-inch slices in the bread using a serrated knife leaving ¼ inch intact at the bottom of each slice. Place the loaf on the prepared baking sheet.
COMBINE the butter, garlic and salt in a small bowl and brush the mixture in between each slice and on top of the loaf.
PLACE a slice of cheese in each slice of bread folding the cheese in half if necessary, to fit. Wrap the loaf loosely with foil and bake for 20-25 minutes or until the cheese is melted. Sprinkle with parsley and serve.
