To make 4 servings of protein pancakes with Greek yogurt, combine buttermilk pancake mix, Cabot Whey Protein powder and walnut pieces in a food processor. Process for 30 seconds or until walnuts are finely chopped. Add water and process for 5 more seconds or until blended. Set aside.
Coat a large skillet or griddle with cooking spray and place over medium-high heat until very hot, approximately 3 minutes.
Spoon ¼ cup batter per pancake onto the hot skillet or griddle, being careful not to overcrowd pancakes. Cook for 1 minute or until bubbles appear and then turn over and cook until the underside of pancake is golden.
