6 rounds pita bread, approx. 6-inches diameter
3 medium tomatoes, thinly sliced
4 ounces Cabot Sharp Cheddar, grated (about 1 cup)
4 ounces Cabot Mozzarella Shredded Cheese (about 1 cup)
¼ cup slivered fresh basil leaves
Prep: 16 mins | Cook: 9 mins | Total: 25 mins
PREHEAT oven to 425°F. Place pitas on a large baking sheet and put in the oven until warm, about 1 minute. Remove pitas from oven and top each one with some thinly sliced tomatoes. Then sprinkle with Cabot Sharp Cheddar, Cabot Mozzarella Shredded Cheese and slivered fresh basil leaves.
RETURN pitas to oven for 8 minutes, or until pita is crispy. Serve whole or cut into wedges.
