For approximately 20 servings, simply spread the guacamole in an even layer in a medium glass bowl (a 7-by-11-inch glass baking dish will also work). Then scatter half of the grated Cabot Extra Sharp Cheddar (or Cabot Lite50 Sharp Cheddar) and half of the scallions. Next, spread the hummus in an even layer, followed by the remaining cheese and scallions. Finally, sprinkle with diced red peppers and dust with chili powder. Serve with tortilla chips and dig in!
