This is simple and clever. It reminds me of many years ago when I was trying to lose weight but still wanted to eat a hamburger. The then-young but now rather famous In N Out burgers places in Southern California offered a "lettuce burger," with all the usual stuff in it except wrapped in leytuce instead of a bun. A bit messier to eat but just as yummy.
