4 large green zucchini, cut into 1-inch thick rounds
1 package precooked Italian sausage crumbles
8 ounces Cabot Vermont Sharp Cheddar, shredded (about 2 cups)
1 jar marinara sauce
Parsley, chopped, for garnish

PREHEAT a griddle or a large skillet to medium heat. Spray lightly with cooking spray. Preheat oven to broil.
COOK the zucchini rounds on each side for 2-3 minutes and set aside.
LINE a baking sheet with aluminum foil and lay out each zucchini round atop the foil. Top with a teaspoon of marinara sauce followed by a few sausage crumbles and a generous sprinkling of shredded cheddar cheese.
BROIL on the top rack of oven for 5 minutes, or until cheese is melted and is lightly browned.
GARNISH with chopped parsley. Serve with extra marinara sauce on the side for dipping.
