4 (9-ounce) Angus beef hamburger patties*
Salt and ground black pepper to taste
4 (2-ounce) slices plus ¼ cup grated Cabot Pepper Jack
8 (6-inch) flour tortillas
¼ cup Chipotle Mayonnaise
Shaved iceberg lettuce
About 1 cup Tomatillo Salsa
PREHEAT grill or grill pan.
SEASON outside of burgers with salt and pepper. Grill to desired degree of doneness.
Top each burger with cheese slice and cover with lid or foil just until cheese is melted, about 1 minute.
PLACE tortillas on grill or directly on stove burners and cook until warm and lightly charred, about 30 seconds.
SPREAD each tortilla with some of mayonnaise. Cut burgers in half and place on tortillas. Add lettuce, salsa and sprinkle of grated cheese. Fold tortillas over burgers and serve (two per person).
