1 tablespoon olive oil
1 tablespoon rice vinegar
2 teaspoons dried thyme leaves
½ teaspoon garlic powder
1 pound grape tomatoes
Salt and ground black pepper to taste
4 teaspoons Cabot Lite50 Sharp Cheddar, grated
PREHEAT oven to 400ºF.
WHISK together oil, vinegar, thyme and garlic powder in large bowl; add tomatoes, tossing gently to coat.
POUR onto baking sheet or sheets, distributing in single layer.
BAKE for 15 minutes, shaking pan midway to redistribute tomatoes.
REMOVE from oven and season with salt and pepper. Sprinkle with cheese and serve.
