1 piece of bread
1 cup frozen chopped kale
1 heaping tablespoon pesto, divided
Salt and Pepper
1 Good Food Made Simple Egg White Patty
½ ounce (2 tablespoons) grated Cabot Extra Sharp or Lite50 Sharp Cheddar
TOAST bread in a toaster oven.
COMBINE kale and ½ of pesto in a small bowl; microwave on HIGH 60-90 seconds or until hot, stirring after 30 seconds.
MICROWAVE egg on HIGH 60 seconds; season with salt and pepper. Spread remaining pesto over toast.
TOP with egg, kale and shredded cheese. Broil until cheese melts (or if preferred, microwave 30 seconds).
